Default What makes certain foods Kosher?

Is it certain types of foods or is it determined by the way they are made or..?
Thank you for your answers. I've googled the topic and it certainly seems to be a complicated process but i guess if your grow up with this it probably seems quite simple. I read that only approx 15% of the american jewish population is kosher. Does anyone know the percentage in Israel? I find this fascinating.
